The Spice

The most patient blend in the house.

Mutton was never a weekday food. It was cooked when someone came, and it was cooked slowly — which means its masala was built for a completely different job than a quick curry powder.

The backbone here is big black cardamom, smoked over wood as it dries, and that smoke is the note the whole blend is organised around. Mace and nutmeg give the richness that stands up to fat. Black pepper carries heat that stays warm rather than sharp, because sharp heat and an hour on the flame do not survive each other.

We roast this blend the longest and rest it the longest. It is the most expensive masala we make and the slowest to produce, and it is the one to reach for when you have time — a pressure cooker will cook the meat, but only a slow bhuno will build the gravy this blend is designed for.

As with our chicken masala: this is a pure vegetarian spice blend. Only spices, nothing else.

Wood-smoked black cardamom

The backbone note, selected for smoke depth. The single most expensive component in the blend.

Longest roast in the house

Slow-roasted further than any other GRAMIVA blend, on controlled low heat.

Rested longest before grinding so mace, nutmeg and pepper marry rather than compete.

Tested at an accredited laboratory with every batch.

The Ritual

Using it properly.

Bhuno is the entire secret. Fry the masala with the onions until the oil separates, add the meat and fry again until it separates a second time. Then, and only then, add water. Half a spoon more in the last five minutes lets the smoke rise.

Separate the oil twice

Once with the onion-tomato base, once after the meat goes in. This is the step that cannot be shortened and the reason home mutton often tastes thin.

Low and slow

This blend is composed for an hour on a low flame. In a fifteen-minute curry its deeper notes never open.

Finish with a half spoon

The last half-spoon goes in five minutes before the flame goes off, so the black cardamom smoke sits on top rather than being cooked into the base.

In the Kitchen

Three ways to begin.

90 minutes

Sunday Mutton

Onions to deep brown, ginger-garlic, tomato, one heaped spoon, oil separates. Mutton in, fry until it separates again. Water, low flame, one hour covered. Half a spoon at the end.

40 minutes

Kathal (Jackfruit)

Raw jackfruit takes this masala better than almost any vegetable — same method, same patience, a third of the time.

50 minutes

Slow Rajma

A heaped spoon into a long-simmered rajma. Black cardamom and kidney beans are an old, underrated pairing.
